You have the time, you have the mood and you’ve got
the sweet tooth. So what to make? Why not try custard filled doughnuts? You are
more than likely to have all the ingredients lying around in the kitchen, anyway.
Here is what you will need
For the dough
4 cups flour (or more depending on your serving
size)
Milk
Sugar
Eggs
Butter
Salt
Baking powder
Water
For the custard
3 egg yolks
2 cups milk
Sugar as per your liking
1 tablespoon cornstarch
Preparation time 1 hour 20 mins
Cooking time 15 mins
So all it takes is 1. 5 hour for these beauties
Instructions
- First things first, get the dough ready and keep it aside to rest. To one cup of milk, add in your yeast, a little bit of sugar and a pinch of salt and give it a good mix.
- Add in your flour
- Crack an egg in there and give it a good mix.
- Use your hands for this, no excuses.
- Add in your room temperature butter. There is no need to melt the butter. Just sort of gently knead it into the dough.
- After the butter has been fully incorporated and you’ve kneaded the dough for around 15 minutes, let it rest for at least one hour.
- Now that the dough has been put aside, crack in 3 eggs and separate the yolks for the custard. To your egg yolks put in your cornstarch and give it a good mix.
- On medium heat, put your milk over the stove and add in your sugar giving it a good mix now and then.
- After the milk has been in there for around 3 – 4 minutes, put a little bit of the milk into the egg mixture and mix it. This is called tempering and making sure that the egg does not cook if we pour it directly into the hot milk.
- Pour the egg mixture back into the milk and give it a stir. The mixture should start to thicken now. It should be this thick, gooey beautiful mess.
- Turn off the heat.
- After you let the custard cool for a little while, take a Ziploc bag and pour in the custard. Keep the zip lock bag in the fridge for about half an hour to make sure it’s nice and chilled.
- Take some caster sugar or if you don’t have any just grind regular sugar into fine powder.
- After one hour, we are going to check the dough, it should have risen a great deal, by now. We’re going to give it another rough of kneading and then take your rolling pin and gently roll the dough to 1.5 inches of thickness. Take a round bowl and cut shapes for doughnut. Use remaining dough to make another ball and repeat same.
- Let the doughnut balls rise for another 10 -15 minutes while you heat up your oil on the stove.
- When you are sure the oil has heated, take your doughnuts and drop them in.
- When the doughnuts are all done, we are going to take our Ziploc bag out of the refrigerator. This would work even better if you have a piping bag at home or else just use a Ziploc bag. It is available in everyone’s home.
- Cut a small home on one corner and make sure not the spill. Push the custard towards that end.
- Cut a small slit in your doughnut side with a small knife and push your Ziploc bag end in there and shove that custard in.
- Then, sugar coat your doughnut with that granulated sugar we had ready.
