Egg Katti Rolls…… but not really



If you’re like me and you’ve been craving the famous Syanko katti rolls, you can try to make your own version of it. I mean it has been more than half a year and I was craving those bad boys so I gave it a try, which is why I call it egg katti rolls, but not really.

Here is what you will need:

For the dough:

3 cups Flour (depending on your serving size of course)

Water

2 tablespoons curd

A pinch of salt

2 teaspoons oil

1 tablespoon sugar

For the filling:

Eggs (I used four)

3-4 green chilies

2 onions

1 lemon

Ketchup

Mayonnaise

Cumin powder

Meat masala powder/ momo masala powder

Black pepper

Black salt

Red chili powder

Butter

The preparation time will take you around 40 minutes and that is because you need to rest the dough. Cutting and readying up the other stuff will take your around 10 – 15 minutes.

Instructions

  1. You will need to prepare the dough first. Take a large bowl and pour in your flour as per your serving size.
  2. Add in your curd
  3. Put in that pinch of salt to your dough and your sugar.
  4. Give it a mix and add water accordingly.
  5. Knead your dough until it becomes soft and stretchy. Your bowl should be clean.
  6. Add a little oil to the dough and set it aside to rest for at least half hour.
  7. Cut up your green chilies and set it aside
  8. Cut up your onions. Cut them up in long strands and not in little pieces. Separate the layers. And add lemon juice to the cut up onions. Set it aside
  9. Take a small bowl and put in about 4 tablespoons of ketchup and 3 – 4 tablespoons of mayonnaise. Give it a good mix and set it aside.
  10. After half an hour, take your dough and divide into equal parts. Take a little bit of flour for making the rolling of the dough easier.
  11. Take a pan and on medium heat, drizzle a little bit of oil in there.
  12. Put in your roti and turn after about a minute. Put in a dab of butter for the second side and press with your spatula and keep turning on sides of the pan. Flip it over one more time.
  13. Once your rotis are ready, we will be making the scrambled eggs. On low heat, drizzle in your oil on your pan.
  14. Crack in your eggs and put a pinch of salt.
  15. Stir the eggs with your spatula to make scrambled eggs, making sure your pan and your spatula are nonstick of course.
  16. When the eggs are done, we will be assembling the rolls.
  17. Take one roti, and lay the sauce on the bottom. Add your scrambled eggs, green chilies and onions.
  18. Sprinkle that spice mixture we made earlier.
  19. Roll up your roti and you can use butter paper or other kind of napkin or paper for the bottom half of the roll. It makes it holding the roll easier like they do at Syanko’s. Tuck the excess part of the paper into the bottom of the roll.

And that’s it. That’s what you can work with for the time being for katti rolls. Feel free to substitute the eggs for anything else you like of course. You could make chicken katti rolls, paneer katti rolls, veg katti rolls, anything you like.
