No Bake Snack


Here is an easier version of the Millionaire’s shortbread. And yes, it’s just as delicious. I wonder how it got its name. Was it a millionaire who first baked it; is the taste worthy of a millionaire’s? Anyway; what’s the gist? It requires no baking. If you have a sweet tooth but do not want to put too much effort, no bake snacks are your thing and this one might just be a life saver.

Here is what you’re going to need

Digestive biscuits ½ pack

Butter

1 can of sweetened condensed milk

1 big bar of chocolate (plain)

Yeah, it’s that easy, all it requires is a little patience.

Instructions

  1. You probably don’t even need me telling this. Grab your digestive biscuits and crush them to bits. Make a fine powder out of it. You can do this in zip lock bag and beat your anger and frustration out on it. Or throw it in a food processor; whichever suits you best. Do the first one; definitely the first one.
  2. Melt your butter in the microwave.
  3. Grab your baking tray or whatever tray you’re thinking of putting it in. Just make sure it’s at least 3 -4 inches deep because there are going to be layers. Baking trays work best. I know I sound like a hypocrite right now, but they do. If you have butter paper, use it. It will make the end results easier.
  4. Put in your crushed biscuits onto the butter paper covered baking tray. And pour your butter over the crushed bits. Take a spoon and mix it well making sure the melted butter incorporates with the biscuit bits. The smell itself can make you add to your weight; or certainly feels that way.
  5. Push down the mixture with your spoon or the bottom of a glass. We want the biscuit part to be firm and compressed.
  6. Throw that baking tray in the deep freezer for about 10 minutes; don’t literally throw it though.
  7. Take a pot or a pan, make sure it’s nonstick and melt some butter on it. Then pour in your sweetened condensed milk and stir profusely for about 3-4 minutes until you can see that the batter is thickening. It should be glossy, light brown, thick and sweet. We all know how caramel looks like.
  8. Take your baking tray out of the freezer and pour in the caramel over the biscuit layer. Then keep it back in the freezer.
  9. We’re going to be do double boiler now so boil a pot of water over the stove and keep another bowl on the top of the water pot. This goes without saying that the top bowl needs to be bigger and wider than the water pot so that it is easier to stir the chocolate in and you don’t burn yourself.
  10. Put in the chocolate on the top bowl. As the water boils underneath, your chocolate starts melting. Stir the silky smooth mess. And resist the temptation to dip in your finger.
  11. Once you have that silky consistency, turn off the heat and take your baking tray out of the freezer again. Your caramel layer must be set by now. Pour your chocolate over the 2nd layer and keep it back in the refrigerator, this time, do not keep in the freezer.
  12. When the chocolate layer has set, pull the butter paper by both ends off the baking tray. This is much easier and leaves your baking tray clean. Cut through into small pieces of the easy no bake snack version of the millionaire’s short bread. Wow, that’s a mouthful of a name and literally, in this case. Remember to share, or not.
