Fluffy Pancakes



Here’s a twist to the well-known pancake recipe. Everyone probably knows this already, but why not try it during the quarantine period? It’s pancakes; you most probably do have all the required ingredients at home. And let’s face it: fluffy pancakes are super fun to play with!


Here is what you will need:

1 egg

½ cup flour

2 tablespoons sugar

1 teaspoon vanilla essence

1 teaspoon baking powder

½ cup milk


The steps are super easy
  1.       Crack open the egg 
  2.       Separate the egg yolk and the egg whites in separate bowls
  3. Take the egg yolk and pour in the ½ cup milk slowly
  4. Mix in the ½ cup flour and mix gradually until the batter is smooth or without lumps
  5. Add in in your baking powder
  6. Pour in your vanilla essence
  7. Take your egg whites bowl and pour in the 2 table spoons sugar and start whisking! You can use an electric hand mixer if you have one. If you don’t have one, you can  use a hand whisker, and well if you don’t have that as well, use a spoon to whisk but it will take a lot of elbow grease
  8. Whisk the egg whites until it looks like cream and forms stiff peaks
  9. Slowly mix in the egg whites into the pancake mixture. Do not mix it all at once. Do it gradually. Do not over mix, just fold it in.
  10. Turn on your stove and put in a dab of butter, if you have any or oil should do. Put in a batch of the batter, as you would do with pancakes and put on the lid.
  11. Cook on medium heat for 1 – 2 minutes.
  12. Drizzle in a table spoon of water into the pan.
  13. Turn it over once you’re sure it is cooked on one side
  14. Garnish with fruits or whatever is available during this quarantine period.
Go ahead make fluffy pancakes for breakfast, they fill you up good!

Dhana Kumari Bajracharya resides amidst the hustle and bustle in Gabahal, Patan. She is a 70 year old woman, who you would think is much younger at age, if you look at her.
